Healthy High Protein White Chicken Chili

A delicious and nutritious white chicken chili packed with lean protein and fiber, perfect for a hearty meal on busy weeknights.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup Greek yogurt or sour cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, avocado, cilantro

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Simmer for 20 minutes, stirring occasionally.
  4. Stir in Greek yogurt or sour cream until creamy.
  5. Serve hot with optional toppings.

Notes

For extra flavor, try adding a splash of lime juice before serving. You can also use rotisserie chicken for quicker preparation.
