Ingredients

- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup Greek yogurt or sour cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, avocado, cilantro
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
- Simmer for 20 minutes, stirring occasionally.
- Stir in Greek yogurt or sour cream until creamy.
- Serve hot with optional toppings.
Notes
For extra flavor, try adding a splash of lime juice before serving. You can also use rotisserie chicken for quicker preparation.
