Healthy Sweet Potato Hash Browns

A delicious alternative to traditional hash browns, made with sweet potatoes for a healthy, satisfying meal.

Ingredients

  • 2 large sweet potatoes, grated
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat until it shimmers.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add grated sweet potatoes, paprika, salt, and pepper; mix well.
  4. Spread the mixture evenly in the skillet and cook for 5-7 minutes until the bottom is golden and crispy.
  5. Flip the hash browns carefully and cook the other side for another 5-7 minutes until crispy and golden.
  6. Garnish with fresh parsley and serve warm.

Notes
