- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1/2 cup blueberries (fresh or frozen)
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, protein powder, oats, baking powder, baking soda, and salt.
- In another bowl, whisk together the applesauce, honey or maple syrup, Greek yogurt, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack. Enjoy your nutritious muffins!

Serve warm or at room temperature. Store in an airtight container for up to three days, or freeze for up to three months.
