- 1 lb ground turkey or chicken
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups low-sodium chicken broth
- 8 oz whole wheat lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground turkey or chicken with chopped onion and garlic until cooked through.
- Stir in crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
- Add the broken lasagna noodles and reduce heat to a simmer. Cook for 10-15 minutes or until noodles are tender.
- Stir in the ricotta cheese and season with salt and pepper.
- Serve hot, topped with mozzarella, Parmesan, and fresh basil.
Notes
For extra flavor, add chopped bell peppers or spinach. Use low-fat cheese options to further reduce calories. For a vegetarian version, replace the turkey or chicken with lentils or plant-based meat.
