Hobo Casserole

A hearty and easy-to-make casserole combining ground beef, potatoes, and cheese.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, diced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the diced onion; season with salt and pepper.
  3. In a greased casserole dish, layer the sliced potatoes, followed by the cooked ground beef mixture.
  4. Pour the cream of mushroom soup over the layers.
  5. Top with shredded cheese.
  6. Cover with aluminum foil and bake for 1 hour.
  7. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

Notes

Feel free to add your favorite veggies, and you can substitute the ground beef with turkey for a lighter version.
