Homemade Croissants

Delightful homemade croissants that are warm, buttery, and flaky, perfect for breakfast or a snack.

  • Total Time: 140 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup whole milk, warmed
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups cold unsalted butter (for lamination)
  • 1 egg (for egg wash)

Instructions

  1. In a bowl, mix warm milk, sugar, and yeast. Let it sit until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and softened butter. Mix until a dough forms.
  3. Knead the dough for about 10 minutes until smooth.
  4. Let the dough rise in a warm place until doubled in size (about 1-2 hours).
  5. Roll out the dough into a rectangle. Place cold butter between two sheets of parchment paper and pound into a flat rectangle.
  6. Place the butter on the dough, fold the dough over, and roll out again. Fold into thirds and refrigerate for 30 minutes.
  7. Repeat the rolling and folding process two more times.
  8. Roll out the dough one last time, cut into triangles, and roll them up from the base to the tip.
  9. Place rolled croissants on a baking sheet, cover, and let rise until doubled.
  10. Preheat oven to 400°F (200°C). Brush croissants with egg wash.
  11. Bake for 15-20 minutes, until golden brown.
  12. Enjoy your freshly baked croissants!

Notes

Use high-quality butter for the best flavor. Don’t rush the rising times for light and airy croissants.
