- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup dried cranberries
- 1/2 cup white chocolate chips
- Cream cheese frosting (for topping)
- Fresh cranberries (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a medium bowl, mix the flour, oats, brown sugar, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cranberries and white chocolate chips.
- Spread the mixture evenly in the pan and bake for 25-30 minutes, or until golden brown.
- Allow to cool before spreading cream cheese frosting on top and garnish with fresh cranberries.
Notes
Make sure the butter is melted but not hot when mixing with other ingredients. Don’t overmix the batter; stir until just combined for a tender texture.
