Easy Grilled Cheese Burrito

A delicious combination of a grilled cheese sandwich and burrito, packed with flavor and quick to make.

Ingredients

  • 1 pound Ground Beef (or turkey/plant-based)
  • 1 packet Taco Seasoning
  • 2 cups Cooked White Rice
  • 1 cup Sour Cream
  • 1 cup Nacho Cheese Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 1 tablespoon Chipotle Sauce
  • 4 large Flour Tortillas
  • 2 tablespoons Butter or Oil

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  2. Add taco seasoning and cooked white rice. Mix well and cook for 2-3 minutes.
  3. Remove from heat and stir in sour cream, nacho cheese sauce, chipotle sauce, and half of the cheddar and mozzarella. Mix until combined.
  4. Lay out tortillas and spoon the meat and cheese mixture onto each. Sprinkle remaining cheese on top.
  5. Fold sides in and roll up tightly.
  6. Melt butter or heat oil in the skillet over medium heat. Place burritos seam-side down and cook until golden brown, about 3-4 minutes per side.
  7. Let cool for a minute before cutting in half. Enjoy!

Notes

Serve with salsa, guacamole, or extra sour cream. Add tortilla chips or salad for a complete meal.
