Italian Chicken Meatloaf

A delicious and healthy Italian chicken meatloaf packed with flavors and made easy for any night of the week.

Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, fresh parsley, ketchup, minced garlic, egg, Italian seasoning, salt, and pepper until evenly combined.
  3. Transfer the mixture to a loaf pan and shape it into a loaf form.
  4. Spread the marinara sauce over the top of the meatloaf.
  5. Bake in the preheated oven for 45-55 minutes, until the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let it rest for about 10 minutes before slicing.
  7. Slice and serve warm with your favorite sides.

Notes

For added flavor, sprinkle additional Parmesan cheese and breadcrumbs on top before baking.
