Japanese Miso Mushrooms

A quick and delicious vegan side dish made with fresh mushrooms and a flavorful miso sauce.

Ingredients

  • 500g fresh mushrooms (shiitake, cremini, or button)
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: chili flakes for extra heat

Instructions

  1. Clean the mushrooms by gently wiping them with a damp cloth.
  2. Slice the mushrooms into uniform pieces for even cooking.
  3. Heat the sesame oil in a large skillet over medium heat.
  4. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  5. Toss the sliced mushrooms into the skillet and cook for 5-7 minutes until tender.
  6. In a small bowl, mix the miso paste and soy sauce with warm water to create a sauce.
  7. Pour the miso sauce over the mushrooms and cook for another 2-3 minutes.
  8. Taste and adjust seasoning, adding more soy sauce or miso as desired.
  9. Garnish with green onions and sesame seeds before serving warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat before serving.
