Instructions
- Preheat your oven to 350°F (175°C).

- Cream butter and sugar in a large bowl until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Gently fold in sour cream.
- Gradually mix dry ingredients into the wet mixture.
- Carefully fold in crushed pineapple.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Whisk together icing sugar and pineapple juice for the glaze.
- Allow the cake to cool before glazing and serve.
Notes
Use well-drained crushed pineapple to prevent excess moisture. For a richer flavor, try cake flour instead of all-purpose flour. Avoid overmixing for a light texture.
