Ingredients

- 2 lb campari tomatoes
- 1 large red bell pepper
- 4 cloves of garlic, peeled
- 1 tablespoon smoked paprika
- 1 teaspoon sumac
- 4 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup parsley, chopped
Instructions
- Cut the tomatoes into quarters and place them in a mixing bowl. Set aside.
- Cut the bell pepper into four parts; discard the stem and seeds. Place in a food processor with the garlic and process until they form a paste.
- Transfer the paste to a bowl and add paprika, sumac, salt, pepper, and olive oil. Mix well.
- Pour the dressing over the tomatoes and mix to coat. Add chopped parsley and let chill for 30 minutes.
- Transfer to a salad serving bowl and serve.
Notes
Use ripe, fresh tomatoes for the best flavor. Adjust spices according to your taste. You can add cayenne for heat if desired.
