Lebanese Tomato Salad

A refreshing and flavorful salad featuring ripe tomatoes and crunchy bell pepper, spiced to perfection.

Ingredients

  • 2 lb campari tomatoes
  • 1 large red bell pepper
  • 4 cloves of garlic, peeled
  • 1 tablespoon smoked paprika
  • 1 teaspoon sumac
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup parsley, chopped

Instructions

  1. Cut the tomatoes into quarters and place them in a mixing bowl. Set aside.
  2. Cut the bell pepper into four parts; discard the stem and seeds. Place in a food processor with the garlic and process until they form a paste.
  3. Transfer the paste to a bowl and add paprika, sumac, salt, pepper, and olive oil. Mix well.
  4. Pour the dressing over the tomatoes and mix to coat. Add chopped parsley and let chill for 30 minutes.
  5. Transfer to a salad serving bowl and serve.

Notes

Use ripe, fresh tomatoes for the best flavor. Adjust spices according to your taste. You can add cayenne for heat if desired.
