Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the sugar and butter until light and fluffy.
- Add the egg and mix well until fully combined.
- Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add this mixture to the creamed butter until well combined.
- Roll the dough into small balls and place them in a mini muffin tin, pressing down to form cups.
- Bake for 10-12 minutes or until golden brown.
- Remove from the oven and let them cool completely.
- Fill each cookie cup with homemade lemon curd.
- Dust with powdered sugar before serving.
Notes
Make sure your butter is softened for easier mixing. You can add lemon zest for a stronger lemon flavor. Avoid overbaking; they should be lightly golden.
