Ingredients

  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, and salt in a bowl.
  3. Beat the softened butter and granulated sugar until creamy in another large bowl.
  4. Add in the egg, vanilla extract, lemon zest, and lemon juice; mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each.
  7. Bake for 8-10 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Dust with powdered sugar before serving, if desired.

Notes

Make sure your butter is softened to room temperature for easier mixing. Use fresh lemon juice and zest for the best flavor. Experiment with different amounts of lemon zest for desired lemon flavor intensity.
