Lemon Crumb Bars

Delightful lemon bars with a crumbly crust and smooth lemon filling, perfect as a snack or dessert.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup granulated sugar (for filling)
  • 1/4 teaspoon salt (for filling)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix together flour, powdered sugar, baking powder, and salt.
  3. Cut in the softened butter until the mixture resembles crumbs.
  4. Press the crumb mixture into the bottom of the prepared baking dish.
  5. Bake for 15 minutes.
  6. In another bowl, whisk together egg, lemon juice, lemon zest, granulated sugar, cornstarch, and salt.
  7. Pour the lemon filling over the baked crust.
  8. Bake for an additional 20 minutes.
  9. Allow to cool completely before slicing into bars and serving.

Notes

Best served chilled or at room temperature. Dust with powdered sugar for added sweetness.
