- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup granulated sugar (for filling)
- 1/4 teaspoon salt (for filling)
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, mix together flour, powdered sugar, baking powder, and salt.
- Cut in the softened butter until the mixture resembles crumbs.
- Press the crumb mixture into the bottom of the prepared baking dish.
- Bake for 15 minutes.
- In another bowl, whisk together egg, lemon juice, lemon zest, granulated sugar, cornstarch, and salt.
- Pour the lemon filling over the baked crust.
- Bake for an additional 20 minutes.
- Allow to cool completely before slicing into bars and serving.
Notes
Best served chilled or at room temperature. Dust with powdered sugar for added sweetness.
