Instructions
- Preheat your oven to 350°F (175°C) and grease a square baking dish.
- In a bowl, mix together flour, powdered sugar, and salt.
- Add the softened butter and mix until crumbly.
- Press this mixture into the bottom of the prepared dish to form the crust.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and baking powder until well combined.
- Pour this lemon mixture over the crust in the baking dish.
- Bake for 25-30 minutes or until the center is set and lightly golden.
- Let cool before dusting with powdered sugar and cutting into bars.
Notes
For the best flavor, use fresh lemon juice and zest. Ensure butter is softened, not melted, for a crumbly crust.
