- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup lemon juice
- Zest of 1 lemon
- 1/2 cup raspberry puree
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- Cream together the softened butter and sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the lemon juice and zest.
- Combine the flour, baking powder, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Pour half of the batter into the prepared baking dish and spread evenly.
- Drop spoonfuls of raspberry puree over the batter and swirl with a knife. Pour the remaining batter over the top and swirl again.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool, then cut into bars and serve.
Notes
Serve at room temperature, with powdered sugar or vanilla ice cream for an enhanced experience. Store in an airtight container for up to three days or refrigerate for up to a week.
