Instructions
- Preheat the oven to 400°F (200°C).
- Thoroughly wash and scrub the russet potatoes under running water.
- Dry the potatoes with a clean kitchen towel.
- Poke each potato several times with a fork to allow steam to escape while baking.
- Rub the potatoes with olive oil, salt, black pepper, garlic powder, and paprika, ensuring they are evenly coated.
- Place the seasoned potatoes directly on the oven rack and bake for about 50-60 minutes or until they are fork-tender.
- While the potatoes bake, season the sirloin steak pieces with salt and black pepper.
- Heat butter in a skillet over medium-high heat.
- Add the seasoned steak bites and sear for about 3-4 minutes on each side for medium-rare doneness.
- Once the potatoes are cooked, carefully remove them from the oven.
- Slice each potato lengthwise and slightly mash the insides with a fork.
- Top each loaded potato with the cooked steak bites.
- Sprinkle shredded cheddar cheese generously over the steak and potatoes.
- Return the loaded potatoes to the oven for 3-5 minutes or until the cheese is melted and bubbly.
- Remove the loaded baked potatoes from the oven and garnish with chopped green onions.
- Serve hot and enjoy your loaded baked potato with steak bites!
