- 1 medium eggplant
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat your air fryer to 375°F (190°C).
- Wash the eggplant and cut it into slices, about half an inch thick.
- In a bowl, mix the olive oil, garlic powder, salt, pepper, and Italian seasoning.
- Add the eggplant slices to the bowl and toss well to coat them with the seasoning mixture.
- Place the coated eggplant slices in a single layer in the air fryer basket. You may need to do this in batches.
- Air fry for 10-12 minutes, flipping the slices halfway through, until they are golden brown and crispy.
- Once done, remove the eggplant from the air fryer and enjoy.
Notes
Select firm and fresh eggplants for the best outcome. Adjust seasoning to your preference for added flavor.
