Low-Calorie Air Fryer Eggplant

A delicious and healthy eggplant dish cooked in the air fryer for a crispy texture without extra calories.

Ingredients

  • 1 medium eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Wash the eggplant and cut it into slices, about half an inch thick.
  3. In a bowl, mix the olive oil, garlic powder, salt, pepper, and Italian seasoning.
  4. Add the eggplant slices to the bowl and toss well to coat them with the seasoning mixture.
  5. Place the coated eggplant slices in a single layer in the air fryer basket. You may need to do this in batches.
  6. Air fry for 10-12 minutes, flipping the slices halfway through, until they are golden brown and crispy.
  7. Once done, remove the eggplant from the air fryer and enjoy.

Notes

Select firm and fresh eggplants for the best outcome. Adjust seasoning to your preference for added flavor.
