Mango Curd Tart

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and diced
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 egg yolk
  • 3 tablespoons cold water
  • 1 cup mango puree
  • 1 cup granulated sugar
  • ¼ cup lemon juice
  • 4 large eggs
  • ½ cup unsalted butter, softened
  • Whipped cream or fresh fruit (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour, butter, sugar, and salt; cut in butter until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and cold water, mixing until the dough forms.
  4. Roll out the dough and fit it into a tart pan.
  5. Blind bake the crust for 15-20 minutes or until golden.
  6. For the mango curd, whisk together the mango puree, sugar, lemon juice, and eggs in a saucepan.
  7. Cook over medium heat until thick, stirring constantly.
  8. Remove from heat and stir in the butter until smooth.
  9. Pour the mango curd into the baked crust and refrigerate until set.
  10. Serve topped with whipped cream or fresh fruit.

Notes

Make sure your butter is very cold when making the crust for a flaky texture. Use ripe mangoes for the best flavor.
