- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and diced
- ¼ cup granulated sugar
- ¼ teaspoon salt
- 1 egg yolk
- 3 tablespoons cold water
- 1 cup mango puree
- 1 cup granulated sugar
- ¼ cup lemon juice
- 4 large eggs
- ½ cup unsalted butter, softened
- Whipped cream or fresh fruit (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, butter, sugar, and salt; cut in butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and cold water, mixing until the dough forms.
- Roll out the dough and fit it into a tart pan.
- Blind bake the crust for 15-20 minutes or until golden.
- For the mango curd, whisk together the mango puree, sugar, lemon juice, and eggs in a saucepan.
- Cook over medium heat until thick, stirring constantly.
- Remove from heat and stir in the butter until smooth.
- Pour the mango curd into the baked crust and refrigerate until set.
- Serve topped with whipped cream or fresh fruit.
Notes
Make sure your butter is very cold when making the crust for a flaky texture. Use ripe mangoes for the best flavor.
