Maple Dijon Chicken & Sweet Potato Bowls

A comforting and delicious meal featuring maple syrup, Dijon mustard, chicken, and sweet potatoes, perfect for meal prep or family dinners.

Ingredients

  • 2 medium Sweet Potatoes (or Butternut squash or carrots)
  • 2 tablespoons Olive Oil (or Avocado oil or melted coconut oil)
  • 1 teaspoon Garlic Powder (or Fresh minced garlic)
  • 4 Chicken Breasts (or Chicken thighs for extra flavor)
  • 3 tablespoons Maple Syrup (or Honey)
  • 2 tablespoons Dijon Mustard (or Whole grain mustard)
  • 1 cup Quinoa or Brown Rice (or cooked leafy greens)
  • Fresh Herbs (like parsley or cilantro)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then drizzle with 1 tablespoon olive oil and sprinkle with garlic powder, tossing to coat.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes, or until fork-tender.
  4. While the sweet potatoes roast, mix maple syrup and Dijon mustard in a small bowl.
  5. Heat the remaining olive oil in a skillet over medium heat, season chicken with salt and pepper, and cook for about 5-7 minutes on each side until cooked through.
  6. Pour the maple Dijon mixture over the chicken in the last few minutes, allowing it to glaze.
  7. Serve roasted sweet potatoes on a bed of quinoa or brown rice, topped with glazed chicken and garnished with fresh herbs.

Notes

You can adjust the sweetness of the dish by using more or less maple syrup. Feel free to add more vegetables like spinach or kale for a nutrient boost.
