- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
- Paprika for garnish
Instructions
- Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
- Cool the eggs in ice water, then peel them.
- Cut the eggs in half lengthwise and remove the yolks.
- In a bowl, mash the yolks with mayonnaise, Dijon mustard, lemon juice, Cajun seasoning, salt, and pepper until smooth.
- Spoon or pipe the mixture back into the egg whites.
- Garnish with chopped green onions and a sprinkle of paprika.
- Serve chilled and enjoy at parties or gatherings.
Notes
For easier peeling, use eggs that are a few days old. If you want extra flavor, consider adding a dash of hot sauce to the mixture.
