Mardi Gras Deviled Eggs

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Paprika for garnish

Instructions

  1. Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  2. Cool the eggs in ice water, then peel them.
  3. Cut the eggs in half lengthwise and remove the yolks.
  4. In a bowl, mash the yolks with mayonnaise, Dijon mustard, lemon juice, Cajun seasoning, salt, and pepper until smooth.
  5. Spoon or pipe the mixture back into the egg whites.
  6. Garnish with chopped green onions and a sprinkle of paprika.
  7. Serve chilled and enjoy at parties or gatherings.

Notes

For easier peeling, use eggs that are a few days old. If you want extra flavor, consider adding a dash of hot sauce to the mixture.
