- 1 teaspoon Pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Chop the zucchini, onion, tomatoes, and peppers into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat.
- Add the onion and cook until it becomes translucent.
- Stir in the zucchini and peppers, sautéing until they are tender.
- Add the tomatoes, garlic powder, Italian seasoning, salt, and pepper; cook for a few more minutes.
- Prepare your rice or other side according to package instructions.
- Serve the vegetable mixture over the rice.
- Store in meal prep containers for a make-ahead lunch.
