- 1 lb ground beef
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups baby potatoes, halved
- 2 tbsp olive oil
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 cups mixed greens
- Lemon juice and olive oil for dressing
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the ground beef, breadcrumbs, egg, garlic, oregano, salt, and pepper until well combined. Shape into meatballs and place on a baking sheet.
- In another bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Bake the meatballs and potatoes for 25-30 minutes until cooked through and golden.
- In a large bowl, combine cucumber, cherry tomatoes, red onion, feta, and olives. Add mixed greens. Drizzle with lemon juice and olive oil.
- To serve, place meatballs and roasted potatoes in a bowl and top with the Greek salad.
