  9. 4 cloves Garlic (Minced)
  10. 1/4 cup Sun-dried tomatoes (Chopped)
  11. 2 tsp Dried oregano
  12. 1 tsp Dried basil
  13. 1/2 tsp Dried thyme
  14. 1 Lemon (Juice only)
  15. 0.5 cup Feta cheese (Crumbled)
  16. 2 tbsp Fresh parsley (Optional garnish)

  1. Prep ingredients and chop everything before cooking.
  2. In a large pan, heat 1 tablespoon of olive oil over medium heat. Sear the chicken until golden and cooked through, about 5-7 minutes. Season with salt and black pepper.
  3. Remove the chicken from the pan and set aside. In the same pan, add 1 tablespoon of olive oil and sauté the sliced onions, minced garlic, and zucchini for 3-4 minutes.
  4. Add the diced red bell peppers, cherry tomatoes, sun-dried tomatoes, dried oregano, basil, and thyme to the pan. Cook for an additional 5 minutes until vegetables are tender.
  5. Return the chicken to the pan and gently combine with the vegetables. Add lemon juice, olives, and feta cheese. Toss everything together and cook for another minute to warm through.
