- 1.5 lbs Chicken breasts, boneless & skinless (Cut into bite-sized pieces)
- 3 tbsp Extra virgin olive oil (Divided for cooking)
- Salt & black pepper (To taste)
- 2 medium Zucchini (Sliced into half-moons)
- 2 Red bell peppers (Diced into chunks)
- 1 large Red onion (Sliced into strips)
- 2 cups Cherry tomatoes (Halved)
- 1 cup Kalamata olives (Pitted and halved)
- 4 cloves Garlic (Minced)
- 1/4 cup Sun-dried tomatoes (Chopped)
- 2 tsp Dried oregano
- 1 tsp Dried basil
- 1/2 tsp Dried thyme
- 1 Lemon (Juice only)
- 0.5 cup Feta cheese (Crumbled)
- 2 tbsp Fresh parsley (Optional garnish)
Instructions
- Prep ingredients and chop everything before cooking.
- In a large pan, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and sear until golden and cooked through, about 6-8 minutes.
- Remove the chicken from the pan and set aside. In the same pan, add the remaining olive oil and sauté the onions and garlic for 2-3 minutes.
- Add the zucchini, red bell peppers, and cherry tomatoes to the pan. Sauté these vegetables for about 5-7 minutes until tender.
- Combine the cooked chicken back into the pan with the vegetables. Season with salt, black pepper, dried oregano, basil, and thyme. Toss everything together.
- Squeeze the lemon juice over the mixture and add the Kalamata olives and chopped sun-dried tomatoes. Gently mix everything together.
- Serve the stir fry warm, topped with crumbled feta cheese and a sprinkle of fresh parsley if desired.
Notes
You can customize vegetables based on preference. For added flavor, consider a splash of white wine while sautéing.
