Mediterranean Chicken Stir Fry

Ingredients

  • 1.5 lbs Chicken breasts, boneless & skinless (Cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (Divided for cooking)
  • Salt & black pepper (To taste)
  • 2 medium Zucchini (Sliced into half-moons)
  • 2 Red bell peppers (Diced into chunks)
  • 1 large Red onion (Sliced into strips)
  • 2 cups Cherry tomatoes (Halved)
  • 1 cup Kalamata olives (Pitted and halved)
  • 4 cloves Garlic (Minced)
  • 1/4 cup Sun-dried tomatoes (Chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (Juice only)
  • 0.5 cup Feta cheese (Crumbled)
  • 2 tbsp Fresh parsley (Optional garnish)

Instructions

  1. Prep ingredients and chop everything before cooking.
  2. In a large pan, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and sear until golden and cooked through, about 6-8 minutes.
  3. Remove the chicken from the pan and set aside. In the same pan, add the remaining olive oil and sauté the onions and garlic for 2-3 minutes.
  4. Add the zucchini, red bell peppers, and cherry tomatoes to the pan. Sauté these vegetables for about 5-7 minutes until tender.
  5. Combine the cooked chicken back into the pan with the vegetables. Season with salt, black pepper, dried oregano, basil, and thyme. Toss everything together.
  6. Squeeze the lemon juice over the mixture and add the Kalamata olives and chopped sun-dried tomatoes. Gently mix everything together.
  7. Serve the stir fry warm, topped with crumbled feta cheese and a sprinkle of fresh parsley if desired.

Notes

You can customize vegetables based on preference. For added flavor, consider a splash of white wine while sautéing.
