  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano
  • Salt & pepper (to taste)

Directions:

  1. Mix marinade ingredients: 3 tbsp olive oil, 2 minced garlic cloves, 1 tbsp lemon juice, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp salt, and ¼ tsp black pepper. Coat the steak with the marinade and let it marinate for 30 minutes to 4 hours.
  2. For the tzatziki sauce, mix together the Greek yogurt, ½ grated cucumber (squeezed dry), 1 tbsp lemon juice, 1 minced garlic clove, and 1 tbsp chopped fresh dill. Chill this mixture in the fridge.
  3. To make the vinaigrette, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp honey, 1 minced garlic clove, ½ tsp dried oregano, and salt & pepper to taste.
  4. Heat a hot skillet and sear the marinated steak for 4–5 minutes on each side. After cooking, let the steak rest for a few minutes, then slice it thinly.
