Mexican Pizza

A delicious and satisfying Mexican Pizza that brings Taco Bell flavors right to your kitchen, perfect for quick meals and gatherings.

Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 ounce refried beans (1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. In a large frying pan or skillet on medium heat, add the ground beef and break it into small pieces. Sauté for 5-8 minutes until cooked through; drain grease.
  2. Add taco seasoning, water, and enchilada sauce, stirring until combined. Let simmer for 1-2 minutes.
  3. To assemble, spread refried beans on one tortilla, top with ground beef, cheese, and another tortilla.
  4. Spread 1 tbsp enchilada sauce on top of the assembled tortilla and cover with shredded cheese.
  5. Repeat until all pizzas are assembled.
  6. For air frying, preheat to 400°F and cook each pizza for about 5 minutes until cheese melts and tortillas are crispy.
  7. For oven baking, preheat to 350°F, arrange pizzas on a lined sheet pan, and bake for 8-10 minutes until cheese is melted.
  8. For pan frying, add oil to a frying pan, cook each pizza covered for 4-5 minutes until crispy.
  9. Serve hot with optional garnishes like tomatoes, red onion, olives, sour cream, and green onion.

Notes

For added spice, use spicy taco seasoning or jalapeños as toppings. This dish can be customized with various proteins or made vegetarian by substituting ground beef with beans or veggies.
