- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 pounds ground beef or lamb
- 2 cups mixed vegetables (carrots, peas, corn)
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 cup beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 cups potatoes, peeled and diced
- 1/2 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the ground beef or lamb to the skillet and cook until browned. Stir in the mixed vegetables and cook for 5 minutes.
- Add the tomato paste, Worcestershire sauce, beef broth, dried thyme, and dried rosemary. Let it simmer for 10 minutes until the sauce thickens. Season with salt and pepper to taste.
- Transfer the meat filling to a baking dish.
- In another pot, cover the diced potatoes with water and bring to a boil. Cook until tender, about 15 minutes. Drain and mash with milk, butter, salt, and pepper.
- Spread the mashed potatoes evenly over the meat filling in the baking dish. Sprinkle shredded cheddar cheese if desired.
- Bake for 20-25 minutes until golden brown. Allow to cool for a few minutes before serving.
Notes
Serve hot, paired with a salad or crusty bread. Leftovers can be stored in the refrigerator for up to 4 days.
