New Orleans Dish

A hearty New Orleans dish that combines sausage, veggies, and rice, perfect for a busy weeknight dinner.

Ingredients

  • 1 lb sausage (andouille or your choice)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 cup rice
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, cook the sausage over medium heat until browned.
  2. Add the chopped bell pepper, onion, celery, and garlic to the pot. Sauté until the vegetables are softened.
  3. Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, and salt and pepper.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until the rice is cooked.
  5. Fluff the rice with a fork, garnish with green onions, and serve hot.

Notes

Best served hot with crusty bread or a simple salad. Great for gatherings!
