Ingredients

- 1 lb sausage (andouille or your choice)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 cup rice
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the chopped bell pepper, onion, celery, and garlic to the pot. Sauté until the vegetables are softened.
- Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, and salt and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until the rice is cooked.
- Fluff the rice with a fork, garnish with green onions, and serve hot.
Notes
Best served hot with crusty bread or a simple salad. Great for gatherings!
