Nigerian Chicken Stew

A flavorful and comforting stew that showcases the rich culinary traditions of Nigeria, made with aromatic spices and vibrant colors.

  • Total Time: 70 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2.5 lbs bone-in chicken (thighs or drumsticks), cleaned
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 onion, chopped
  • 1/4 cup vegetable oil
  • 4 large Roma tomatoes
  • 1 large red bell pepper
  • 1 small red onion
  • 2 scotch bonnet peppers (or 1 for less heat)
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 bouillon cube
  • Salt to taste

Instructions

  1. Season the chicken with salt, pepper, paprika, curry powder, thyme, and chopped onions. Let it marinate for 30 minutes to absorb the flavors.
  2. In a large skillet, heat vegetable oil over medium-high heat. Sear the chicken pieces until browned on both sides. Once browned, set the chicken aside.
  3. Blend the Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers into a smooth mixture.
  4. In the same skillet, fry the tomato paste for about 2 minutes to enhance its flavor. Then, add the blended sauce and reduce the heat to medium. Cook for 10 minutes to let the flavors meld.
  5. Add the garlic powder, ginger powder, bouillon cube, and salt into the skillet. Stir everything together.
  6. Return the chicken to the pot and let it simmer on low for 25–30 minutes. This will make the chicken tender and help the stew thicken.
  7. Serve hot with white rice, fried plantains, or cauliflower rice.

Notes

For extra richness, consider using coconut oil instead of vegetable oil. Adjust the number of scotch bonnet peppers based on your spice preference. Let the chicken marinate longer, if possible, to deepen the flavor.
