- 1 pound green beans, trimmed
- 2 Tbsp olive oil
- 2 large cloves garlic, minced
- Salt and pepper, to taste
- 1/2 cup Parmesan cheese, freshly grated
- 1/2 lemon, juice
- 1–2 Tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper.
- Place the trimmed green beans on the prepared baking sheet and drizzle with olive oil. Toss until well-coated.
- Add minced garlic, salt, and pepper. Toss well.
- Spread the green beans in a single layer on the baking sheet.
- Sprinkle the grated Parmesan cheese over the green beans.
- Roast in the oven for about 20 minutes until lightly browned and the cheese is melted.
- Squeeze half a lemon juice over the top, sprinkle with parsley, and serve hot.
Notes
Store leftovers in an airtight container for up to three days. You can also freeze them for up to three months.
