How to Make Pan-Seared Steak with Garlic Butter

Ingredients

  • 2 lbs New York Strip Steaks (2 steaks) or Ribeye or Top Sirloin Steaks (1 lb each steak, 1 1/4” thick)
  • 1/2 Tbsp vegetable oil (or any high heat cooking oil like canola or extra light olive oil)
  • 1 1/2 tsp sea salt
  • 1 tsp black pepper (freshly ground)
  • 2 Tbsp unsalted butter
  • 2 cloves garlic (peeled and quartered)
  • 1 sprig fresh rosemary

Directions

  1. Thoroughly pat the steak dry with paper towels.
  2. Just before cooking, generously season the steak with 1 1/2 tsp salt and 1 tsp black pepper.
  3. Heat a cast iron pan until hot, then add 1/2 Tbsp oil over medium-high heat, swirling to coat.
  4. Once the oil is very hot, add the steaks to the skillet.
  5. Sear the steaks on the first side for 4 minutes until a brown crust forms. Then, flip and cook for another 3-4 minutes.
  6. Using tongs, turn the steaks on their sides to render the white fat and sear the edges (about 1 minute per edge).
  7. Reduce the heat to medium and immediately add 2 Tbsp butter, the quartered garlic cloves, and the rosemary to the pan.
  8. Spoon the butter sauce over the steak, tilting the pan to help cover the steak. Continue spooning the sauce over the steak for a minute or until it is about 5-10 degrees from your desired doneness. (Remember, the temperature will rise another 5-10 degrees while the steaks rest.)
  9. Transfer the steak to a cutting board, loosely cover, and let it rest for 10 minutes before slicing it into 1/2-inch strips.
  10. Spoon extra butter sauce over the sliced steak before serving.

How to Serve Pan-Seared Steak with Garlic Butter

Serve the steak slices on a warm plate. You can pair it with side dishes like roasted vegetables, mashed potatoes, or a fresh salad. Drizzle any remaining garlic butter sauce over the steak for added flavor. Enjoy with a glass of red wine for a perfect meal!

How to Store Pan-Seared Steak with Garlic Butter

If you have leftovers, store them in an airtight container in the refrigerator. The steak will stay fresh for up to 3 days. Reheat gently in the microwave or on the stove to preserve its flavor and texture.

Tips to Make Pan-Seared Steak with Garlic Butter

  • For the best flavor, choose high-quality steaks.
  • Make sure your pan is really hot before adding the steaks for a perfect sear.
  • Let the steak rest after cooking; this keeps it juicy.
  • Experiment with different herbs, like thyme or sage, for variety in flavor.
  • Use a meat thermometer to check doneness if you’re unsure.

Variation

You can customize this recipe by adding different spices or herbs in the butter, such as thyme, parsley, or even a splash of balsamic vinegar for a tangy twist.
