- 4 chicken breasts
- 1 cup grated Parmesan cheese
- 2 cups baby potatoes, halved
- 2 cups green beans, trimmed
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning. Spread them out on a sheet pan.
- In the same bowl, combine chicken breasts with the remaining olive oil, minced garlic, salt, pepper, and Parmesan cheese, and coat well.
- Place the chicken on the sheet pan alongside the potatoes.
- Roast in the preheated oven for 20 minutes.
- After 20 minutes, add the green beans to the sheet pan and roast for an additional 10-15 minutes, until chicken is cooked through and veggies are tender.
- Serve warm and enjoy your easy one-pan meal!
Notes
You can store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
