Parmesan Crusted Chicken Sheet Pan Dinner

A simple, delicious one-pan meal featuring tender chicken breasts, crispy potatoes, and vibrant green beans, all roasted together with Parmesan cheese.

Ingredients

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning. Spread them out on a sheet pan.
  3. In the same bowl, combine chicken breasts with the remaining olive oil, minced garlic, salt, pepper, and Parmesan cheese, and coat well.
  4. Place the chicken on the sheet pan alongside the potatoes.
  5. Roast in the preheated oven for 20 minutes.
  6. After 20 minutes, add the green beans to the sheet pan and roast for an additional 10-15 minutes, until chicken is cooked through and veggies are tender.
  7. Serve warm and enjoy your easy one-pan meal!

Notes

You can store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
