Parmesan Crusted Chicken Sheet Pan Dinner

A delicious weeknight meal featuring chicken, red potatoes, and green beans, all baked on one pan for easy cleanup.

Ingredients

  • 1 1/2 lb chicken breast (about 34 pieces, approx. 1 inch thick)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/3 cup grated parmesan
  • 1/3 cup breadcrumbs (Italian or plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 tbsp grated parmesan
  • Salt and pepper to taste
  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F.
  2. Line a sheet pan with parchment paper or spray with cooking oil.
  3. Toss the potatoes with olive oil, minced garlic, and seasonings until well coated. Spread them on one-third of the pan.
  4. Bake the potatoes for about 10-15 minutes, adding an extra five minutes for browning if desired.
  5. While the potatoes are baking, combine all chicken ingredients in a medium bowl and mix well to coat the chicken.
  6. Remove the pan with potatoes from the oven and add the chicken on another third of the pan.
  7. Toss the green beans with olive oil, garlic, and seasonings, then add them to the pan.
  8. Bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F. Optionally, broil on high for an additional 4-5 minutes for extra crispy potatoes.
  9. Remove from the oven and let cool for a few minutes before serving.

Notes

Cut the potatoes to even sizes for even cooking. Consider marinating the chicken beforehand for enhanced flavor.
