- 1 1/2 lb chicken breast (about 3–4 pieces, approx. 1 inch thick)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/3 cup grated parmesan
- 1/3 cup breadcrumbs (Italian or plain)
- 1/2 tsp cracked pepper
- 1/2 – 3/4 tsp sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 1 – 2 garlic cloves, minced
- 2 tbsp grated parmesan
- Salt and pepper to taste
- 1 lb fresh green beans, ends trimmed
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp parmesan (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F.
- Line a sheet pan with parchment paper or spray with cooking oil.
- Toss the potatoes with olive oil, minced garlic, and seasonings until well coated. Spread them on one-third of the pan.
- Bake the potatoes for about 10-15 minutes, adding an extra five minutes for browning if desired.
- While the potatoes are baking, combine all chicken ingredients in a medium bowl and mix well to coat the chicken.
- Remove the pan with potatoes from the oven and add the chicken on another third of the pan.
- Toss the green beans with olive oil, garlic, and seasonings, then add them to the pan.
- Bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F. Optionally, broil on high for an additional 4-5 minutes for extra crispy potatoes.
- Remove from the oven and let cool for a few minutes before serving.
Notes
Cut the potatoes to even sizes for even cooking. Consider marinating the chicken beforehand for enhanced flavor.
