Cattle Drive Casserole

Hearty and flavorful, this Cattle Drive Casserole combines ground beef, vegetables, and cheese, all layered in a delicious biscuit base.

Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix, like Bisquick
  • 1 cup Water
  • Cooking Spray, like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, cook the ground beef over medium-high heat until no longer pink. Drain excess fat.
  3. In a bowl, combine the biscuit mix and water to prepare the dough. Press the dough into a greased 9 x 13″ casserole dish and bake for 5-8 minutes.
  4. In the skillet, cook the chopped onion and red bell pepper with the ground beef for about 4 minutes. Mix in the taco seasoning.
  5. Spread the beef and vegetable mixture over the baked biscuit layer.
  6. For the sour cream layer, mix sour cream, mayonnaise, diced green chiles, ¾ cup cheese, and garlic powder. Spread this mixture over the beef layer.
  7. Add spoonfuls of salsa on top and sprinkle the remaining cheese.
  8. Bake uncovered for 30 minutes, or until hot and bubbly.
  9. Allow to cool slightly before serving, garnishing if desired.

Notes

Great for family dinners or potlucks. Customize with your favorite vegetables or add jalapeños for extra heat.
