- 1 lb Chicken Breast (or chicken thighs)
- 2 tbsp Olive or Sesame Oil
- 2 cloves Garlic (minced)
- 1/2 cup Soy Sauce (low sodium)
- 1/3 cup Pineapple Juice
- 2 tbsp Honey or Brown Sugar
- 1 tbsp Rice Vinegar or Apple Cider Vinegar
- 1 tsp Cornstarch (mixed with 1 tbsp water)
- 1 tbsp Water
- 1.5 cups Cooked Rice (white, brown, or jasmine)
- 1 cup Pineapple Chunks (fresh or canned)
- 1/2 whole Red Bell Pepper (diced)
- 1/4 cup Green Onions (chopped)
- Sesame seeds (for serving)
- Crushed red pepper (optional)
Instructions
- In a large pan, heat olive or sesame oil over medium heat. Add the chicken and cook until browned and fully cooked, about 5-7 minutes on each side. Remove chicken from the pan and set aside.
- In the same pan, add minced garlic and diced red bell pepper. Sauté for about 2-3 minutes until soft.
- In a small bowl, mix soy sauce, pineapple juice, honey (or brown sugar), rice vinegar, cornstarch mixed with water, and crushed red pepper if using. Pour this sauce into the pan with the vegetables.
- Add the cooked chicken back to the pan along with pineapple chunks. Stir everything together to coat the chicken and vegetables in the sauce. Let it simmer for about 5 minutes.
- Stir in cooked rice and green onions. Mix well and cook for another 2-3 minutes until everything is heated through.
- Serve hot, garnished with sesame seeds on top.
Notes
For extra flavor, marinate the chicken in the soy sauce and pineapple juice mixture for 30 minutes before cooking. Adjust sweetness by using more or less honey or brown sugar. Feel free to add other vegetables for additional nutrition.
