Pineapple Chicken and Rice

A quick and easy dish that blends sweet and savory flavors with chicken, pineapple, and rice.

Ingredients

  • 1 lb Chicken Breast (or thighs for juiciness)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce (low sodium recommended)
  • 1/3 cup Pineapple Juice (from canned pineapple)
  • 2 tbsp Honey or Brown Sugar (maple syrup as substitute)
  • 1 tbsp Rice Vinegar (or apple cider vinegar)
  • 1 tsp Cornstarch (mixed with 1 tbsp water)
  • 1.5 cups Cooked Rice (white, brown, or jasmine)
  • 1 cup Pineapple Chunks (fresh or canned)
  • 1/2 whole Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame Seeds (for garnish)
  • Crushed Red Pepper (optional)

Instructions

  1. Heat oil in a pan over medium heat, add minced garlic, and sauté for 1 minute.
  2. Add chicken breast pieces and cook until golden brown and cooked through.
  3. In a bowl, mix soy sauce, pineapple juice, honey or brown sugar, vinegar, cornstarch mixed with water, and red pepper.
  4. Pour the sauce mixture into the pan with the cooked chicken and add pineapple and diced red bell pepper. Simmer for 5-7 minutes until thickened.
  5. Add cooked rice to the pan and toss everything until well-coated.
  6. Garnish with chopped green onions and sesame seeds before serving.

Notes

For best flavor, marinate chicken in sauce for 30 minutes. Use day-old rice for better texture.
