- 1 lb Chicken Breast (or thighs for juiciness)
- 2 tbsp Olive or Sesame Oil
- 2 cloves Garlic (minced)
- 1/2 cup Soy Sauce (low sodium recommended)
- 1/3 cup Pineapple Juice (from canned pineapple)
- 2 tbsp Honey or Brown Sugar (maple syrup as substitute)
- 1 tbsp Rice Vinegar (or apple cider vinegar)
- 1 tsp Cornstarch (mixed with 1 tbsp water)
- 1.5 cups Cooked Rice (white, brown, or jasmine)
- 1 cup Pineapple Chunks (fresh or canned)
- 1/2 whole Red Bell Pepper (diced)
- 1/4 cup Green Onions (chopped)
- Sesame Seeds (for garnish)
- Crushed Red Pepper (optional)
Instructions
- Heat oil in a pan over medium heat, add minced garlic, and sauté for 1 minute.
- Add chicken breast pieces and cook until golden brown and cooked through.
- In a bowl, mix soy sauce, pineapple juice, honey or brown sugar, vinegar, cornstarch mixed with water, and red pepper.
- Pour the sauce mixture into the pan with the cooked chicken and add pineapple and diced red bell pepper. Simmer for 5-7 minutes until thickened.
- Add cooked rice to the pan and toss everything until well-coated.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
For best flavor, marinate chicken in sauce for 30 minutes. Use day-old rice for better texture.
