Ingredients

  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top

Instructions

  1. Prepare the Pan: Start with a non-stick frying pan on medium heat. Sprinkle half of the grated cheese evenly across the bottom of the pan and let it melt until crispy on the edges.
  2. Whisk the Eggs: Crack the eggs into a bowl and whisk until smooth to ensure fluffiness when cooked.
  3. Cook the Eggs: Pour the whisked eggs over the melted cheese, cover with a lid, and cook for 3–5 minutes until firm and golden.
  4. Add the Toppings: Carefully flip the egg-cheese base, spread passata on top, add salami slices, and sprinkle remaining cheese. Cover and cook for an additional 2–3 minutes.
  5. Serve: Remove from the pan, sprinkle with mixed herbs, and serve warm.

Notes

For a healthier twist, add chopped vegetables or use different cheeses. Serve immediately for the best texture.
