- 3 eggs
- 60g (approx. 2 oz) reduced-fat cheese, grated
- 1 tbsp passata (about 15g)
- A few slices of salami (approx. 20g)
- Mixed herbs, to top
Instructions
- Prepare the Pan: Start with a non-stick frying pan on medium heat. Sprinkle half of the grated cheese evenly across the bottom of the pan and let it melt until crispy on the edges.
- Whisk the Eggs: Crack the eggs into a bowl and whisk until smooth to ensure fluffiness when cooked.
- Cook the Eggs: Pour the whisked eggs over the melted cheese, cover with a lid, and cook for 3–5 minutes until firm and golden.
- Add the Toppings: Carefully flip the egg-cheese base, spread passata on top, add salami slices, and sprinkle remaining cheese. Cover and cook for an additional 2–3 minutes.
- Serve: Remove from the pan, sprinkle with mixed herbs, and serve warm.
Notes
For a healthier twist, add chopped vegetables or use different cheeses. Serve immediately for the best texture.
