- Potstickers (frozen or homemade)
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 cups mixed greens (like spinach or bok choy)
- 2 green onions, sliced
- Soy sauce to taste
- Sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, heat a splash of sesame oil over medium heat. Add the minced garlic and grated ginger. Sauté until fragrant.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the potstickers to the boiling broth and cook according to package instructions, usually about 4-6 minutes until cooked through.
- Stir in the mixed greens and allow them to cook for an additional 2 minutes.
- Season with soy sauce, salt, and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
If you have leftovers, let the soup cool completely and store in an airtight container in the refrigerator for up to 3 days.
