Potsticker Soup

Ingredients

  • Potstickers (frozen or homemade)
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups mixed greens (like spinach or bok choy)
  • 2 green onions, sliced
  • Soy sauce to taste
  • Sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a splash of sesame oil over medium heat. Add the minced garlic and grated ginger. Sauté until fragrant.
  2. Pour in the chicken or vegetable broth and bring to a boil.
  3. Add the potstickers to the boiling broth and cook according to package instructions, usually about 4-6 minutes until cooked through.
  4. Stir in the mixed greens and allow them to cook for an additional 2 minutes.
  5. Season with soy sauce, salt, and pepper to taste.
  6. Serve hot, garnished with sliced green onions.

Notes

If you have leftovers, let the soup cool completely and store in an airtight container in the refrigerator for up to 3 days.
