Ingredients

  • 1 cup rolled oats (gluten-free if desired)
  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (sub maple syrup for vegan)

Instructions

  1. Combine all ingredients in a large bowl.
  2. Using a small cookie scoop, scoop out approximately 24 small balls.
  3. Use your hands to roll the mixture into balls and place them on a plate.
  4. Freeze for 10 minutes to help them firm up.

Notes

Store in an airtight container in the refrigerator for about one week, or freeze for up to three months. Consider adding mini chocolate chips or dried fruit for extra sweetness.
