- 2 cups enchilada sauce

- Salt and pepper to taste
- Tortilla chips or tortillas, for serving
- Shredded cheese, optional for topping
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
- Stir in the black beans, corn, enchilada sauce, chili powder, cumin, salt, and pepper.
- Let the mixture simmer for about 5-7 minutes, stirring occasionally.
- Serve in bowls topped with tortilla chips or tortillas and cheese if desired.
