Ingredients

  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
  3. Stir in the black beans, corn, enchilada sauce, chili powder, cumin, salt, and pepper.
  4. Let the mixture simmer for about 5-7 minutes, stirring occasionally.
  5. Serve in bowls topped with tortilla chips or tortillas and cheese if desired.
