Quick & Easy Homemade Butter Chicken

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread (for serving)
  • Steamed rice (for serving)

Instructions

  1. In a bowl, combine chicken with 1 teaspoon salt, garlic powder, sweet paprika, curry powder, and Greek yogurt.
  2. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Heat vegetable oil in a large pan over medium-high heat and cook the marinated chicken for 5-7 minutes until browned.
  4. Remove chicken and set it aside.
  5. Add butter to the same pan, then sauté garlic and onion for 2-3 minutes until soft.
  6. Add tomato sauce, sugar, salt, and black pepper, and stir well.
  7. Let the sauce simmer for about 10 minutes, then slowly add heavy cream and cayenne pepper if desired.
  8. Return the chicken to the pan, add garam masala and curry powder, and simmer for 5-10 minutes.
  9. Garnish with parsley and serve with naan or rice.

Notes

For a healthier version, consider adding vegetables like bell peppers or spinach. Adjust spices to taste.
