Ingredients

  • Vinegar (optional for boiling eggs)
  • ½ cup soy sauce (light sodium)
  • ¼ cup water
  • ¼ cup mirin
  • 2 tablespoons granulated sugar

Instructions

  1. Boil the eggs for exactly 6 minutes in a pot of boiling water.
  2. Shock the eggs in an ice bath for about 15 minutes.
  3. Prepare the marinade by mixing soy sauce, water, mirin, and sugar in a bowl until the sugar dissolves.
  4. Peel the cooled eggs and place them in the marinade, ensuring they are fully immersed.
  5. Marinate for at least 8 hours or overnight for best flavor.
  6. After marinating, enjoy the eggs sliced in half atop ramen or as a snack.

Notes

For easier peeling, add vinegar to the boiling water. If you want firmer yolks, increase boiling time to 7 minutes.
