Ingredients
Scale
- 6 large eggs
- Vinegar (optional for boiling eggs)
- ½ cup soy sauce (light sodium)
- ¼ cup water
- ¼ cup mirin
- 2 tablespoons granulated sugar
Instructions
- Boil the eggs for exactly 6 minutes in a pot of boiling water.
- Shock the eggs in an ice bath for about 15 minutes.
- Prepare the marinade by mixing soy sauce, water, mirin, and sugar in a bowl until the sugar dissolves.
- Peel the cooled eggs and place them in the marinade, ensuring they are fully immersed.
- Marinate for at least 8 hours or overnight for best flavor.
- After marinating, enjoy the eggs sliced in half atop ramen or as a snack.
Notes
For easier peeling, add vinegar to the boiling water. If you want firmer yolks, increase boiling time to 7 minutes.
