- 1 package Ramen noodles
- 2 cups Cabbage (shredded)
- 1 cup Carrots (shredded)
- 1/2 cup Green onions (sliced)
- 1 Red bell pepper (diced)
- 1/4 cup Soy sauce
- 2 tablespoons Rice vinegar
- 2 tablespoons Sesame oil
- 1 tablespoon Sugar
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 2 tablespoons Toasted sesame seeds
Instructions
- Cook the ramen noodles according to package instructions, then drain and rinse with cold water.
- In a large bowl, combine the shredded cabbage, carrots, green onions, and red bell pepper.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, salt, and pepper to make the dressing.
- Add the cooled ramen noodles to the veggie mixture and pour the dressing over it.
- Toss everything together until well mixed.
- Sprinkle toasted sesame seeds on top before serving. Enjoy your salad!
Notes
Best enjoyed chilled. Allow to refrigerate for about 30 minutes before serving. Adjust dressing to taste and add any additional vegetables you like.
