Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup lemon juice
  • 1 cup powdered sugar
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking dish.
  2. Mix together flour, cocoa powder, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy in another bowl.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually add the dry ingredients to the wet mixture. Fold in the raspberries.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Whisk together lemon juice, powdered sugar, and lemon zest to make the glaze in a small bowl.
  9. Drizzle the glaze on top once the bars cool.
  10. Cut into squares and serve.
