Rotisserie Chicken Casserole

A simple and comforting casserole made with rotisserie chicken, rice or pasta, and creamy mushroom soup, perfect for busy weeknights.

Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup cooked rice or pasta
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded rotisserie chicken, cooked rice or pasta, cream of mushroom soup, shredded cheese, frozen mixed vegetables, milk, garlic powder, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased baking dish and smooth the top.
  4. If using, sprinkle breadcrumbs on top for added crunch.
  5. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
  6. Let it cool slightly before serving. Enjoy your comforting casserole!

Notes

Feel free to customize with different vegetables or proteins. For a creamier dish, add more milk or sour cream. Panko breadcrumbs can be used for a crunchier topping.
