Ingredients

- 8 oz orzo
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 4 cups fresh spinach
- 12 oz salmon fillet
- 1 cup heavy cream
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook orzo according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Stir in sun-dried tomatoes and cook for 2 minutes.
- Add fresh spinach and cook until wilted.
- Push the vegetables to the side of the skillet and add the salmon fillet. Cook on each side until golden and cooked through. Remove salmon and flake into pieces.
- Pour in heavy cream, stir to combine, and then add the cooked orzo and flaked salmon. Season with salt and pepper.
- Serve warm, topped with Parmesan cheese.
Notes
Make sure not to overcook the salmon for optimal tenderness and flakiness. Fresh or frozen spinach can be used, and sun-dried tomatoes can be adjusted based on preference.
