Salmon Spinach Orzo Pasta

A tasty and comforting dish that combines flaky salmon, fresh spinach, and creamy orzo in one pot, perfect for a weeknight dinner or impressing guests.

Ingredients

  • 8 oz orzo
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 4 cups fresh spinach
  • 12 oz salmon fillet
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Stir in sun-dried tomatoes and cook for 2 minutes.
  4. Add fresh spinach and cook until wilted.
  5. Push the vegetables to the side of the skillet and add the salmon fillet. Cook on each side until golden and cooked through. Remove salmon and flake into pieces.
  6. Pour in heavy cream, stir to combine, and then add the cooked orzo and flaked salmon. Season with salt and pepper.
  7. Serve warm, topped with Parmesan cheese.

Notes

Make sure not to overcook the salmon for optimal tenderness and flakiness. Fresh or frozen spinach can be used, and sun-dried tomatoes can be adjusted based on preference.
