Seafood Stuffed Potatoes

Delicious baked potatoes filled with a flavorful seafood mixture, topped with melted cheese.

Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crawfish, chopped
  • 1 cup creamy Cajun cheese sauce
  • 1/2 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke holes in them with a fork.
  3. Bake the potatoes for about 45-60 minutes until tender.
  4. While the potatoes are baking, prepare the Cajun cheese sauce according to package instructions or make your own.
  5. In a mixing bowl, combine the chopped shrimp, crawfish, green onions, garlic powder, salt, and pepper.
  6. Once the potatoes are baked, cut them in half lengthwise and scoop out some of the flesh to create room for the filling.
  7. Mix the potato flesh with the seafood mixture and Cajun cheese sauce.
  8. Refill the potato skins with the seafood mixture and top with shredded cheese.
  9. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
