- 4 chicken thighs
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup chicken broth
- 1 cup white wine
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Season the chicken thighs with salt and pepper, then brown them on both sides.
- In a casserole dish, layer the diced potatoes, carrots, onion, and garlic.
- Place the browned chicken on top of the vegetables.
- Pour the chicken broth and white wine over the chicken and vegetables.
- Sprinkle thyme on top.
- Cover the dish with aluminum foil and bake for 1 hour.
- Remove the foil and bake for an additional 20 minutes, until the chicken is cooked through and the vegetables are tender.
Notes
For added flavor, marinate the chicken thighs in garlic and thyme for a few hours before cooking. Adjust seasoning to your taste.
